Today Spitting Pig are spit roast catering in Bricket Wood for Dave’s 50th Birthday party. It is quite an intimate affair with numbers of forty or so very special friends and family and quality and service is as important as taste.
Dave and his wife Trish had contacted us this time last year after hearing very nice remarks after a friend of their’s had been to a wedding where we provided a hog roast and were looking for quality caterers to help with their special occasion which was still a year away but they wanted to get some one booked in before the best were booked!.
What was important to Dave was quality……and he made this very clear from our first contact. He explained they were middle age, had travelled the world and eaten at great places and it was important to him that the big 50 birthday celebration was to be a dining experience in the company of close friends in his own back garden that would be of restaraunt standard…. Intimate, personal and with a touch of class.
We arranged to meet at their home and made a couple of platters of our home made canapés for them to sample while we talked about the menu and service for the day. It is really good for clients to be able to see and taste what we offer when they are thinking of booking us for a wedding or sophisticated menu.

So on the day we arrived nice and early and set up our catering tent at the back of the marquee that was in the back garden. We had arranged that the hog roast machines would be on display at the entrance to the marquee so when the guests arrived they could see their banquet of hog roast and lamb roast being slowly cooked before their eyes. The marquee was also filled with the most delicious aroma …. It was like the effect you get when you walk into a bakers and the smell of freshly baking bread fills your nostrils and makes your taste buds tingle at the thought of tucking in to the nice crisp warm loaf. At the back of the tent, we were busy preparing canapés and chilling champagne and wine for the tables while our team of waitresses laid tables and decorations and prepared a arrival drinks table.
As the guests arrived they gathered round the spit roast machines and were truly delighted to see the hog and lamb being cooked from fresh on site. Many commented “ oh we are so glad you are not one of those companies that pre cook a pig and just turn up and carve”. Our chef, Brian was at hand to chat to guests as they watched the hog and lamb roasting and our waitresses glided around the garden offering champagne and our scrumptious home made canapés to wet every ones apertite before they were asked to be seated for the spit roast feast.
Canapes really make the difference to many events… It is so nice to have a few small nibbles and they certainly went down well. We find simple things are what people want as long as they taste good ! We had a great selection including our butchers own gourmet cocktail sausages that we roasted in honey and sesame seeds and another meaty canapé was rare fillet of beef on a crostini with a salsa Verdi topping. Our waitresses were coming back to the catering kitchen shouting “ more beef… They cant get enough! As well as a couple of hot options, we also had a selection of cold canapés including parmesan shortbreads with honey roasted plum tomatoes, feta and black olive and also our home made dill scones topped with crème fraiche and horseradish and a swirl of smoked salmon with dill.
Our hog roast machines are very versatile and after the guests were seated we wheeled them to the back of the marquee where we had set up the serving tables that were laid with crisp linen and gleaming stainless steel chaffing dishes along with china bowls of salads that had been freshly made by our chefs during the day and presented to the highest standards.
Guests are often amazed at the way we serve…. Our chefs can almost all of the time offer you the cut you really want. We carve the meat as you queue and take a bit of time to offer you different choices for example some like the leaner sliced pork that we carve from the back quarter and loin where as other like the juicier shoulder which we tend to fork the meat off the bone. And of course my favourite is from around the ribs and belly which is quite fatty but just so tender and moist and full of flavour. So often we will offer guests different cuts which are full of different flavours and textures and this really does add to the whole hog roast experience. Our waitresses served the various other dishes of salads and roasted new potatoes which were roasted in the spit roast machine that we cooked the lamb in and were infused with the lamb juices, rosemary and garlic and are just absolutely fantastic
While the guests were tucking into their hog roast banquet, we were busy plating up desserts and dressing them with ripe berries, mint and they were to be served with fresh cream. Teas and coffees followed and we served a simple cheeseboard with fine hard and soft cheeses from Bricket Wood and the continent.
All of the guests were overwhelmed with both the quality of the food and service we offered and Dave and Trish were so thrilled. They said we knew you would be good from what we had heard, but you exceeded our expectations on all fronts and have really made Dave’s Birthday wish come true.
We find at this time of year we are starting to get bookings for catering for hog roast weddings and mile stone events for the following year and we already have taken several bookings already.
