For more involved functions involving salads or vegetables, we have an assistant solely keeping the salads and stuffing topped up to help keep the serving run to time.
For a wedding of 150, we would probably have the chef, a couple of assistants serving the meats, stuffing and crackling, about four waitresses serving vegetables or salads and a two or three assistants behind the scenes preparing the various courses to help things run quickly and smoothly as well as Karen who organises us all and makes sure the event goes to plan and on time.
After the afternoon reception, whilst half of the team clear away and wash up, the rest will be preparing the evening buffet and setting up the tables to ensure your evening buffet is served on time as well.
